Last month, I enjoyed one of the best meals of my life at Yam’Tcha in Paris. This dish was the standout from the 9 course Asian-French fusion dinner. A modest dish of King Crab Salad with Crab Soup, Spring Cabbage, and XO Sauce blew me away with refined, yet bold flavors.

Chefs often talk about ‘letting the ingredients shine’ and this was the ultimate example of the power of simplicity.  This is the kind of cooking that inspires me.
